Slicing is eased considerably by rapid pre-freezing of the food surface.  Ideal for case-ready meats, this application has recently opened the door to numerous new products, for example, the slicing of fresh poultry parts before further processing into ready-made meals.

Typical equipment used for Crust-Freezing in batches are the Cabinet Freezers or tumblers, while Tunnel or Spiral Freezers are used for on-line processes.

            
The rapidity of the cryogenic process does not simply mean cost and time efficiency, it also has a positive effect on final product quality.  In a rapid freezing process, the formation of large water crystals is dramatically reduced; the membranes of the food cells are therefore significantly better protected. Thus treated, the food retains its taste, integrity and texture; thawing and cooking losses are minimised.

 

Modified atmosphere packing (MAP) of fresh food products using technology and gases will improve product quality, prolong shelf life and help to add value to your products. The principle of MAP is to remove the air from the product package and replace it with a gas, or a gas mixture, with quality enhancing capabilities. The packing method and material have to be suitable for MAP.
